I, too, adulted well today. I ran five miles (slowly starting to run again after all that time off to recover from the tendonitis), tutored for an hour, and then spent the entire afternoon cleaning and doing laundry. I even cleaned out the fridge!

Now I need to do one last assignment for my grad class, and then I plan to slounge.

Blessings on the head of my supervisor at tonight's house. She called during supper to say, "You have lots of PTO, the snow's getting worse, I'm coming in at 7:30 so you can go home early." (Both she and the overnight person live spitting distance from the house, but it's 11 miles for me.) She rolls in at 7:35, saying "I'm sorry, I should have been here ages ago. In fact, I should have found coverage so you didn't have to come in at all. This snow is ridiculous. By the way, my teenage son is brushing off your car."

By the time I put my shoes on and got out to my car, I had to brush it off again. Driving home along the state highway, I could see taillights in the distance, but the tracks had already filled in. Blessings on the heads of those who made the decision and did the work of including rumble strips along the center line and shoulder.

That's awesome! Hominy is kind of a magic ingredient. My friend makes an amazing vegan pozole using smoked hominy. So delicious!

We don't use recipes for chili in my household. For the last few years, I'm in charge of vegetarian chile (mo' beans, mo' better!) and Bob makes meaty chili with ground venison.

My favorite part of chili is eating it with chips and cheese and avocado. noms.

Why have I never done this!??! I thought I was a smarty-pants when I made corn muffins to go with chili, but anything that lets me eat more avocado is at the top of my list.

Hey. New board.

I have never made chicken enchiladas, but have made two different vegetarian enchiladas recipes from Real Simple that I absolutely love, so my advice is to go to Real Simple's website and search for enchiladas.

Honestly, that is basically my advice for anything ever. Food Lab and Cooks Illustrated are my favorite cooking resources because I am a little crazy and like learning about the extremes of home cooking, but Real Simple is the one I use the most. At least three recipes a week. Delicious, easy, consistent.

I do have an enchilada technique tip, actually. If you use corn tortillas, warm them up before you try to roll them around the food. Less cracking. Microwave 20 seconds (wrapped in a damp paper towel) or use a skillet.
