I had a really stressful day at work. I was running late and I had to be be in online pick up. We are currently uderstaffed and so there was only me while someone else was going to lunch. There was too much for just one person. I was constantly having to stop and do something else -customer would come up, customer needed something brought out to them, and then phone wasn't' working right etc. I just got completely overwhelmed. I couldn't do anything to get on top. I did call my team lead and she came and helped get it all straightened out but it's just too much.
The store as a whole is understaffed but somehow we were also over hours this week and they were sending people home early today and cutting people off tomorrow. I don't get how we can barely have enough people to run the store and yet still manage to go over hours that much.
And then driving home I got behind a car that there was no way it was street legal. It had lights in the back that I guess were the brake lights that did this kind of cascade/ripple thing and then went solid and then flashed multiple times. And then changed color. I changed lanes and was able to get ahead of the car but then it got ahead of me and I wanted to pull over but the traffic was heavy and trying to figure out how to change lanes through the stop and go traffic and figure out a place to pull in was just ... it was easier to just keep going. The car did turn off at some point or get way ahead of me I don't know. By the time I got home I felt awful and ended up going to lie down.
Well, last year I made it from cauliflower which was actually pretty tasty.
I was just thinking as I ate my dinner that it's almost embarrassing how much I like cauliflower rice. I mean, I like it as its own thing! I love cauliflower in general.

One of my main work-arounds on carbs is eating things on little cauliflower thins. Like, Bi-Rite has the tastiest tuna salad (bright, crispy, lemony with capers, onions, celery) and I just eat it on a cauli thin.

I recommend that you cook some kind of cauliflower
in some kind of way
and put a lot of cheese on it.
My standard cauliflower preparation is to steam a head (or however much I have) in the microwave for 7 min/lb and then sprinkle it with as much shredded cheddar cheese as it will hold, letting the heat of the cauliflower melt the cheese. Yum.
Cauliflower: roast that bitch in the oven. I cut it into florets, because it roasts faster that way and I am impatient as shit. Toss the florets with olive oil and salt, dump onto a pan, sprinkle with smoked paprika or turmeric, roast at 400 for 10-11 minutes, then flip them over and roast for another 10 minutes or so. Fucking FANTASTIC.
Although I am also a huge proponent of cheese on cauliflower. So many ways to yummify it!
