You can do bitters + sugarcube (the true Champagne Cocktail recipe), but Sofia's about ten million times sweeter than I usually like, as I'm a dry, dry girl.

Wow, you are, indeed. I was thinking this is kind of dry for me. I'll try the bitters & sugarcube for the champagne cocktail. It may have to wait until tomorrow because I'm fairly sure we don't have any bitters. We don't keep a well-stocked bar--just some Jim, Jack & José and usually I keep a bottle of white zin chilled.
