So I know I have a cold, but you wouldn't THINK I'd need a two hour nap in the middle of the day, when I got 13 hours of sleep last night. Apparently, you'd be wrong, though. Bleah. I have gotten NOTHING done today, which means I have to work really hard starting...um...in a few minutes.

We're doing a lot of rice, too. But somehow rice&cheese just doesn't ease the mac&cheese jones. I'm going to try the quinoa pasta tossed with a little coarse black pepper and sea salt, a dollop of cottage cheese and some minced garlic, though. I know it won't be the same as egg noodles, but damn, I miss that dish.
Bev, here's the oat scones recipe:
Oat Scones
1 cup milk
1 1/2 cups regular oatmeal
1/2 c. plain yogurt
1 egg
1/2 c. unsweetened applesauce
2 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
3 packets (1 TBS.) Splenda/sugar/fructose*
1 tsp. cinammon
1 tsp. pumpkin pie spice**
1 c. oat bran
Preheat oven to 350 degrees.
Heat milk til scalded.
Add oatmeal to the milk; stir; and let sit for a few minutes.
Spray an oven-proof large pie-pan (9-10") with non-stick spray.
Add yogurt to the oat mixture, along with egg and applesauce.
In another container, mix: baking soda; baking powder; salt; splenda/sugar/fructose; cinnamon; pumpkin pie spice; and oat bran.
Add dry ingredients to wet ingredients and pour into the pie pan (the dough will start to bubble and rise) and quickly put into the preheated oven.
Bake approximately 30 minutes, or until browned.
After removing from oven, let sit a few minutes and turn out onto a cooling rack. Let sit 5 minutes, then cut into 8ths.

*The choice of sweetening agent is up to you -- people on WW tend towards Splenda, so as to be sugar-free; WW Core plan allows people to use fructose; and if you don't care so much about the sugar-free-ness (after all, it's only 1 Tbs.), just use sugar.
**I imagine you could substitute nutmeg or some other spice, or just omit this entirely.
