And also:

Fruit Muffins

Into a large mixing bowl put the following:

2 cups 9 Grain Cereal* (Bev -- I don't know if 9-grain cereal has wheat; if it does, I'm sure there are other similar grain-blend cereals that are wheat-free)
2 cups of oatmeal
16 oz unsweetened apple sauce
1 tin of evaporated skim milk OR 2 cups ff plain yogurt
4 eggs
2 tsp vanilla

Mix all together and allow to soak for about 20 minutes

Meanwhile, mix together the following:
2 cups oatmeal that has been blended to a powder OR 2 c. oat bran
1 Tbsp baking powder
2 tsp baking soda
1 tsp salt
1 cup Splenda/sugar/fructose
2 tsp cinnamon (or any mixture of spices you enjoy)

Add the dry ingredients to the moist and stir just until all is moistened.

Add 1 cup of Blueberries (frozen are fine; and you could really use whatever type of fruit you prefer)

Spray muffin cups with non-stick spray and fill them to the very top(they do not rise).

Bake at 375F for 20-30 minutes.

NOTE: When I make these, I cut the recipe in half, and it still makes 18 muffins (regular-size muffin tins, not jumbo).

*Like a cracked whole-grain mixture. The one I use comes in a bag in the section of the grocery store that has oatmeal.

PP spice is (correct me if I'm wrong) cinnamon, clove, and either nutmeg or allspice. I think. Apple pie spice is cinnamon, and nutmeg, I think.

Oh, and on the fruit muffins -- you really need to freeze whatever you can't eat within 2-3 days, because they WILL go bad. However, they freeze very well, and thaw quite nicely.

There's a Gluten-Free Market store just down the street from me that I probably should start shopping at when I have to start making my own food. Not a bad idea to go with that instead of too much bread and pasta.

I haven't made the scones yet, but I've made the muffins twice in the past month, and they really are good. You can tweak the amount of sugar/splenda/fructose down or up, depending on how sweet (or not) you like things to be. I cut the amount in half, which is just a teeny tiny bit too un-sweet for me. But the full 1 c. was *too* sweet for me. So, maybe 2/3.
