So, I'm guessing you understand, but offhand I'd say it's because the horse doesn't ruminate, so the grass is less fully processed, and the deer rely more on speed as their modus operandi, so don't want to get weighed down with a digestive system as heavy-duty as the cow's. The cow, OTOH, relies more on size and numbers for protection, which lets it pursue economies of scale and process down to the last blade huge quantities of grass at one time. Result: high-volume waste, ready at the same time.
