My mother just did a thing where she sauteed apples and leeks and cooked the chops in that, butI don't know where the actual recipe came from. It was good, though! (I think the recipe also called for fennel.)

How do I tell when it's done? (This is generally why I don't cook pork.)
Cut it open? That's how I cook every chunk of meat, which is also why I don't usually do that.

I'd just spread butter on both sides, salt it, and pan saute over medium heat for 12 to 14 minutes, flipping it every 3 or so. Drizzle each side with honey before the last 2 flips to get some nice extra browning/carmelization.
