Help me, hivemind: easy recipes for cooking a thick boneless pork chop?
I'd just spread butter on both sides, salt it, and pan saute over medium heat for 12 to 14 minutes, flipping it every 3 or so. Drizzle each side with honey before the last 2 flips to get some nice extra browning/carmelization.
I'm getting kind of hungry now, and this is not helping.

No, but they're half price in the afternoons.

I don't tend to cook much pork (bacon aside), because it always seems to come out too dry for me. I'm not sure what I'm doing wrong.
Overcooking, I bet, but also it's so dry because they've bred all the fat out -- if you care, brining helps.
