Speaking of errant terminology, egg cream seems a bit of a misnomer. Makes me wonder where the term came from. I think I looked it up once and found the narrative less than compelling. Didn't remember it anyway.

You're doing it wrong. It's chocolate syrup and seltzer. It's basically a kind of chocolate soda stirred into a high froth.

It also works a lot better if you've got an old-fashioned seltzer bottle. It doesn't foam up right if you just pour the seltzer in.

I will not attempt to serve it to you. But using cream instead of milk is never wrong.
I do have an old fashioned seltzer bottle but I prefer to use the sodastream. Foams up fine either way.
