I made the beet pesto that Consuela linked to on Saturday (this one [link] for brunch yesterday, and it was delicious! I might experiment with replacing the almonds - to me, the almond flavor competed a bit too much with the beet flavor - but it was still awesome.

Eta: I have been told that the word "pesto" is derived from the same root as "pestle" and anything that has been ground up in a pestle can reasonably be called pesto.
