Eta: I have been told that the word "pesto" is derived from the same root as "pestle" and anything that has been ground up in a pestle can reasonably be called pesto.

I'm making the massive faux pas of not looking the answer up first, but I thought pesto means paste, and that it was the process of making an emulsified mixture that made it a pesto.
