I agree, bestiality does not apply when there is sentience for everyone involved (and communication of some sort - if you don't know the other party is sentient bestiality might still be an appropriate label).

It seems part of the reason bestiality is considered immoral is that animals can't consent to sex with humans. Which is obviously not an issue with a sentient, consenting dolphin.

I've heard stories that, in the swim with the dolphins features at water parks and such, there have been problems with male dolphins, shall we say, putting the moves on the human swimmers.
