Torta! Torta! Torta! 3 tsp unsalted butter 1 1/2 tsp chopped fresh thyme 1/2 cup thinly sliced or chopped green onions 1/2 cup freshly grated Parmesan cheese 1 tbs flour (I used spelt flour, if memory serves) 3/4 tsp salt 1/2 tsp sugar freshly ground black pepper (it doesn't say how much) 1 1/2 pounds sweet potatoes, peeled & thinly sliced (about 3 fairly large ones) 1 large Granny Smith apple, peeled & thinly sliced Melt butter; generously brush a 9" cake pan with some of it. Preheat oven to 375. In a bowl (or your bathtub, I suppose, or perhaps in a brandy snifter - honestly, did they need to say "in a bowl"?) combine thyme, onions, cheese, flour, salt, sugar and pepper - or, you know, all the dry ingredients. Sheesh! Toss to blend well. Carefully arrange a single layer of sweet potato slices in concentric circles, overlapping slightly. Do not be disturbed by the optical illusion this might create! Resist its insidious power! Next, evenly layer with half of the apple slices. Sprinkle with about 2 tbs of the dry mixture and drizzle with about 2 tsp of butter. Use half the remaining sweet potato slices for the next layer, top with the remaining apple slices and the remaining dry mix, and drizzle with butter. End with a layer of the remaining sweet potatoes and drizzle again with butter. You did save enough butter, didn't you? Or do you have some left over? Uh-oh, better start again! Press down gently to flatten. Or beat into submission. Your choice. Cover the pan with aluminum foil and bake until the potatoes are just tender (or at least sentimental and weepy), about 45 minutes. Remove the foil and continue baking, uncovered, until lightly browned at the edges, 25-30 minutes. If you choose to be uncovered in solidarity with your torta, be sure to adjust the thermostat. Transportation notes (I swear, I'm not making this up!): Tightly cover and place in the car in a position to prevent tipping. I think maybe this qualifies for the "how to live" series. Or perhaps they mean, avoid those who would tell you not to take any wooden nickels. But I don't know what the torta has to do with that. No instructions for those traveling by camel, ferry boat or unicycle. If you have refrigerated your torta (which you are allowed to do, for up to a day, or so says the recipe), you can reheat it, covered, in a 375 degree oven for 30 minute. Let sit for at least 5 minutes before unmolding. To server, invert the warm torta onto a serving platter (and not a canoe or velvet Elvis painting!) and cut into pie-shaped wedges. That is all.

Perkins, yum! Simplest is to bake them like a regular potato, and eat with butter and a generous sprinkle of brown sugar. So good.
You can also slice them with a mandolin slicer and bake them into sweet potato chips.
Mashing is also good, using a bit of molasses.
Erm, I may love the sweet potato just a bit.

All of those sound good. I may have to save the torta for when I am feeling more ambitious though.

Or cut up and bake as "fries," and sprinkle seasoned salt on them.
