Okay, next question, which of those horses could one insert into the 1830s Wild West without too many questions? I mean, I don't think it has to be a canonical Wild West horse, because there's magic involved in the transformation, but nobody's freaking out at its existence so far...

Quarter horses would work: I would go with a reining or cutting type quarter horse - but possibly with less extravagent mane and forelock. (The extra hair is mainly a current style. . .) [link]
Quarter horses are wonderful*. They really would be a perfect horsey substitute for the Impala.
* Except for one particular QH by the name of Dudley who was evil on four hooves and largely responsible for my unwillingness to ride any more.
My cousin says that the only horse that went over backwards on her (i.e., reared up and went backwards) was a quarter horse.
She dislikes them.
