Quarter horses are wonderful*. They really would be a perfect horsey substitute for the Impala.

* Except for one particular QH by the name of Dudley who was evil on four hooves and largely responsible for my unwillingness to ride any more.

I would definitely say that mustangs are a possibility. Cowponies are a type not a breed and back when horses were the main form of transport "grade" or non-purebred horses were the rule not the exception.
