Cheese you can believe in.
Honestly one of the best sandwiches of my life was kind of like grilled cheese with manchego-- it was a sandwich of melted manchego with seed cake. Oh man.

Sharp cheddar FTW!
I am, however, an apple snob and am pretty particular about which breeds I'll eat.
Braeburns all the way. I can no longer stand Red "Delicious" (which are the variety I grew up with), and Granny Smiths are excellent when paired with the sharp cheddar.
I am fond of Pink Lady, Jonathon, and Jonagold.

Mmmm. I do find it hard to imagine a melted cheese scenario that wasn't yum.
Now I want cheese fondue AND bagna cauda!
Mmm, potatoes and warm raclette!
Okay WRT apples, I've been told that West Coast apples don't hold a candle to East Coast, which makes me sad but given that apples have never been my favorite fruit I have no problem believing it. My current favorite apple is the honey crisp. Mmmm.
I like the macintosh apples and their near relatives--paula reds. Cortlands, Winesaps and jonathans are also tasty.
I can do Golden Delicious or Galas in a pinch.
Pink Lady
YES! With EXTRA-sharp cheddar. Just sharp cheddar is blandola to me.
My current favorite apple is the honey crisp
I JUST finished one. The core is still sitting on my desk. YUM!
The plastic cheese grilled cheese sandwich is a distinct (and delicious) category from all other grilled cheese sandwiches. They're all delicious, but I think they fill separate dietary and emotional needs than fancy cheeses and good breads grilled up in the same way.
What is bagna cauda?
