why does Dyson make the decision to give up his wolf the second time round?

I think it's a combination of all the reasons you mention but mostly that he regrets not doing it the first time. I don't think it's explicitly stated, though.

Kenzi's drinking doesn't seem like that big of a problem to me. I'm not sure why. She seems to have more of a binge drinker thing going on, which a lot of people do when they are young and then get over, and she is young and generally unconcerned with consequences, so it just seems all of a piece with that attitude.

No one has ever mentioned a concern about Dyson turning someone into a wolf when he's out running through the woods or whatever, so I don't think it is catching. You're born that type of Fae or you aren't and that's it.

both Argus Filch and Arthur Weasley from Harry Potter! And Rupert Graves, which I knew about. Yum.
