Does anyone have a good recipe for cornbread? I've tried a few in the past, but they always seem too dry.

My mom makes really good corncakes but there's not really a set recipe. It's just a cup of cornmeal, an egg, roughly half a cup of milk (enough so the texture is moist but not runny, and can be slowly poured) and sugar to taste. Instead of baking it, she pours the mix like flapjacks into a skillet with heated canola oil and flips each cake when the top side is riddled with bubbles and solidifying.

I'm sure it's horribly unhealthy, but it's also gooood.
