First of all you can just say, "make sure the shortest layer is long enough to tuck behind my ears." Also, ask for some advice for your stylist on product. You don't want anything heavy, but even just a little bit of the right hair goop will help keep your hair out of your face. I'm not talking about a big all-morning styling adventure either - just a little somethin' somethin' you rub up between your fingers and slide along the hair that frames your face.
Also, Dana, you can just say you want to be able to put it all into a ponytail. People tell that to Nick Arrojo all the time!

That's mostly product with a bit of blow drying to turn the ends and back out. 10-15 minutes. You'd need thickish hair for it.
