I figure I'll brown it in a pan, stick it in the pot, come home to yummy pork goodness.
What do we think about browning the meat tonight and then sticking it in the fridge? I can't see myself getting up early enough to brown pre-work.

I'm no chef, but I thought that braising vs stewing was based on the amount of liquid used in the cooking process, not the pot. If the liquid covers the meat, it's a stew, if it doesn't, it's a braise.
But yeah, kind of funny on the unkosher.
