What's different about the plastic-wrapped ones? Are they tailored for baking?

My potato had a sticker on it claiming some sort of greatness in baking. It needs to talk about speed in baking. I'm on soft foods until tomorrow, and that's the best I can do with what's here.

I was very doubtful about the microwave trick the first time I tried it, but it really does work quite well.
