Definitely refinance -t! I just did, it was pretty simple.
I would try a bite of Mac and cheese ice cream but can't imagine I"d want an entire scoop.

Having discovered that my local Greek food truck where everything else was delicious made disgusting fried mac & cheese bites (since removed from their menu—I was not alone in my opinion!), I would be extremely dubious about trying it as ice cream.
That sounds like a fault of the truck, though, since in my experience, fried mac & cheese bites are delicious!
I thought the mac n cheese ice cream was a bad idea, but I have issues with Kraft (I always get a chemical-y undertaste with their stuff) and wouldn't think of trying it. If I want mac n cheese I either make it from scratch or buy frozen, depending on time. The idea of a small amount of a savory ice cream (gelato? sorbet?) with appetizers sounds appealing, though.
Carbs + cheese = delicious
Truth. Although ice cream is fairly carbolicious, so this doesn't rule out mac and cheese ice cream.
I'd probably try a bite. Maybe two to be sure. Then again, I've tried rotten shark and cricket chocolate bars, so I may not be an example of someone with good culinary sense.
I also don't like chocolate chips in my ice cream (it's a texture thing—chocolate chips should be just a couple of degrees off melting, and ice cream makes them too cold). So take my assessment for whatever it might be worth.
Fried Mac & cheese bites always sound like a good idea - mac & cheese =yum, frying things usually adds tastiness - but I’ve been disappointed in the actual foodstuff on numerous occasions. Too much mac not enough cheese, perhaps. Or ratio of filling to outer crust is off. Or maybe my expectations just get too high. IDK.
I'm your opposite, Calli. I like chocolate chips straight out of the freezer.
I like mint chocolate chip ice cream but I do find the frozen chocolate chips a little disconcerting. As long as they melt in your mouth, as m&m’s used to say, i can work with it.
So, I went to Rocket Mortgage who had done my previous refinance (via Quicken Loans) so they still had some information and filled in their questionnaire with reducing my payment as my goal and they suggested a new loan that would reduce my monthly payment by $106 but increase the overall cost of my loan by rather a lot and that doesn't seem worthwhile. But thanks for poking me to check into the option!
Dammit!! I closed on my refinance last Friday….so of course TODAY I get an email from American Express offering $2k if I refinance through that SAME LENDER. AASRFH.
