Anyone have suggestions for something I could make for dinner that would feed someone who’s doing keto (not super strictly, but somewhat), someone who is gluten free, and two of us who like carbs and bread and butter and so on?

Frittata is super protein, low carb, easy and tasty. AND you bread eaters can have toasted baguette with it and everybody has a side of salad.

So it's snowing/sleeting and it's cold and ideally I'd be in my my cozy winter clothes and bundled up with my nose feeling slightly cool inside. But instead I'm hot and wearing short sleeves and may put on shorts because M's mom who is cold all the time HATES wearing long sleeves/layers so we've compromised to the living room clock w/the temp saying its 73 degrees. I'd prefer 72 and got her down to 72 but then she said 73 only.

However, I went for a brief walk in the snow and felt happy and realized I made the error of not putting socks on with my boots (I was going to just step outside but got carried away and walked down to the intersection) .

I will go out later. As much as snow is a pain in the ass to deal with I just love being out in it.

People were out driving , not many, mostly trucks but I saw one mini van type suv . The snow on the ground is all light and fluffy but with the sleet coming down it's going to get icier. And the first guy I saw driving had a phone in one hand. He was going pretty slow but I hope he put it down when he got on main street.

The other problem with the snow is I have to see the dentist- who is in Brevard and I don't know when I'll be able to get in , depends on what happens with the snow up there. I think they are projected to get a foot or more of snow.

I did something to my bridge or maybe I have something stuck under it I don't know. But instead of feeling better it's a little worse. I put off calling them because I am not looking forward to the drive up into Brevard, there is a route we can take that is less curvy but still a lot of up and down and it's longer. And I have been getting car sick. I think when M does take me up we will stay at least one night at Mom's so I don't have to do the round trip and the dentist in one day. And I'm going to take an eye mask because even with sunglasses the dental lights will be too bright shining in my eyes. Stupid concussion.

The cats haven't wanted to go outside. Penny took a few steps on the back porch and nope'd her way back inside. Duchess took a few steps and ran back in. We haven't tried Scrappy out in the snow or Lovey. Scrappy has never encountered snow so I'm curious to see his reaction. Hopefully we won't lose power.

M's mom has been trying to get us to turn the heat up because so when the power goes out the house will stay warmer longer. She's convinced that we will lose power (which I think is a good chance)but that we are going to be without power for at least a week. I think some parts of the area will be without power that long if the storm does the worst but I don't think we will because we are right in downtown now (the town has grown up since the last time big storm she remembers decades ago that took out the power for a week) and the longest I've known the house to be without power was about 8 or 9 hours and others had their power out much longer.

I like David's suggestion.

And with a salad you can always have certain components on the side that people can add in if there are other food issues. When Mom made salad she would always have the tomatoes and cucumbers on the side because I don't like either and I don't think my brother was found of cucumbers .

I am keto and am making a chicken today. If you include turnip or rutabaga in the roast veg, keto folks have something to eat. But I also do not put my requirements on others. Mostly I can find something to eat, because I am not also vegan— so even if they serve pasta I can usually eat the protein and the veg. Or with pizza, I just scrape off the cheese and toppings. Or with sandwiches, I just eat the innards. I don’ think it is the host’s duty to cater to my weird dietary restrictions.

I've been informed by M's mom that we are in blizzard conditions. It is really windy but it's not close to blizzard like conditions and you'd think the woman who lived in Iowa for years would know that but she has to Bring The Drama! to everything.

On the other hand M's youngest niece turned 9 on Friday and we dropped her birthday gift off yesterday and she was SO EXCITED that it was going to snow for her birthday (or close enough). She has a sled and they live on a hill so she's prepared. I'm hoping to see some pictures of her sledding and playing in the snow because she's a really sweet kid.

I feel this way as a guest, but as a host I want to cater to everyone's dietary needs/wants/mild preferences!

Roast chicken is the easiest thing ever. (This recipe used to be called "The Most Difficult Roast Chicken Recipe In The World" but I guess the joke was putting people off of actually trying it.) tl;dr, stick a lemon up its butt and put it in the oven.
