I do a lot of "Keto" stuff and the pop culturing of it makes me a little nutty too, even though the recipes are good. I have type two diabetes, and stumbled upon it because I was "eating to my meter"- that is, I would eat, then test my blood sugar at one and two hours. I eliminated the items that caused my blood sugar to be iout of control. It seems to work for me, because I am a year with normal A1C, I have great energy, and my cholesterol is lowered, but I would not recommend it as a diet for "normal" people. It is frankly unsustainable for a person who doesn't want to watch every single thing they eat, and probably not healthy if your body is processing sugar normally.. My doctor is on board. People want to talk about my diet all the time because I have very clearly lost a ton of weight, but to me that was a side effect of eating to control my blood sugar. I would hate for anyone to do this for weight loss reasons only because I think it is possibly unsustainable and unhealthy, but it works for me. I try to use the conversational opportunities to let people know they can eat butter and still be healthy and that some of the important part is taking pleasure in food. I have found with "Keto" that i can still enjoy wonderful sauces and flavors without rice or pasta to soak them up.

The Keto helps the blood sugar and weight loss which also helps the blood sugar. Most of my family is diabetic and have found that after their weight is down they are able to eat a wider variety of food without blowing their sugar level. Some have been able to stop their meds after weight loss. Both the carby food and the weight play a factor. Most of my diabetic family just cut out the simple carbs and don't go full keto, but a couple have and find it the best way to keep the sugar demon at bay.

I do a modified version of Keto because it helps with my chronic pain issues. But I'm careful about it, and get a full blood panel every six months or so. But there are still days I'd punch someone for a waffle.
