Mayonnaise works very nicely as an egg substitute in a lot of baking - I actually prefer it for making corn bread. I do not recall having tried it with meatloaf, but I can't think of any reason it would not work.

Mayo is just egg+oil, right? Makes sense!
My apartment is now torn up because all of my walls needed to be painted, post-electrical work. Good thing I wasn't planning to have people over for Easter!

Yeah, I've used it in a pinch for baking. Things were a little crispier.

The frozen egg stuff is super handy when you don't need them much. I'll have to try the mayo trick.
I think I'll go for the liquid egg, if I can stash it in the freezer. I'm not sure about the flavor of the mayonnaise in meatloaf.
