I would think that it defeats the point of a sacrifice to the gods if you eat it. Then it's just dinner and a show.
Internet says in Santeria, you eat the chicken after sacrificing the blood, and in ancient Judaism, mostly priests ate the meat.
IIRC, in ancient Greek paganism, certain portions of the meat were burned as an offering for the gods, but the rest became a feast for the worshippers.
