Today I mixed orange juice, freshly grated ginger, and honey and set it to boil. I cut up several mini-carrots and put them in the mixture to cook. After simmering 15 minutes I removed the carrots and boiled down the liquid into a glaze. I put the carrots back in to coat them, and then I served them with meatloaf for lunch. They were amazing ! I will totally be making this again.

It really was good. I'm not the biggest carrot fan in the world, but I have a bunch of extra orange juice on hand, and I'm looking for ways to use it. So far, it's been the carrots and orange pancakes. Both good. Drinking the juice straight in quantity makes me itchy, hence the search for cooked alternatives.

I can't really go outside because of the rain and wind, so I am making a version of chicken tortilla soup, but substituting Sriracha tofu for the chicken.
I would like to report that the soup is pretty delicious.
That sounds good, shrift. Today I boiled a rutabaga with a head of cauliflower, some carrots and some potatoes, mashed them, and added a block of Neufchatel cheese. It was very yummy.
