I looked into this sous vide immersion cooking notion and am intrigued. [link] Then again, I never met a kitchen device that didn't intrigue me.
So good for cooking fish, Laura! Also amazing for custards. Anything finicky that you have to worry about scalding or boiling over or over cooking, sous vide is like magic.

Yes, it looks like most of the sous vide recipes are for meat, but the ravings over the fish results seem encouraging. Fish and seafood are so easily overcooked.
