I think your places are doing flatbread wrong. In my experience, flatbread is like pizza, but without tomato sauce and/or mozzarella cheese, and maybe in a different shape, but not on a cracker.

I had what turned out to be THE BEST grilled cheese sandwich this weekend. Gruyere cheese, bacon pieces and corn--yes, corn kernels. It was a great combo of creamy/crunchy and savory/sweet. Can't wait to try it on my husband.
