Same nomenclature as lisah re: grilled vs toasted. I am also partial to a sandwich made with toasted bread and cold cheese although I don't have a name for it (most often made because I generally keep sliced bread in the freezer and toasting it is the quickest way to make it edible but sometimes that particular flavour profile is just What I Want Now.

Can you do rice cakes or corn tortillas or anything vaguely bread-like, Sophia? I'm mostly just curious with a healthy doe of wanting to try to come up with a grilled cheese sandwich facsimile for you, feel free to ignore me.

That is WAY too much work. I don't think I've ever been able to do that. I mean, I've worked those hours, but it was terrible and not good quality work and I sure didn't bounce back well.

I did that for almost a month, two jobs ago, when I was in my 30s. Never again.

I listen to a couple of Fox News podcasts to help balance out my podcast politics listening. It's kinda nauseating to have some of the people on there equating BLM to Neo-Nazis and blaming the media for, well, everything.

I can see where that would be depressing, Gud. On the other hand, I'm pretty sure Fox News is no longer considered a "news" channel. Its CEO said they're not looking to compete with other news channels, but with TNT and ESPN. It's entertainment for ultra conservatives. I'm working on an online course with, among others, Bill Adair, the Politifact guy. He suggests the Weekly Standard for a conservative perspective. [link]

Since Sophia mentioned keto bread, I'm betting she can't do potatoes, either. Otherwise the cheese-covered latkes would be a great suggestion, and I'd make them for dinner.

I know I found a recipe for keto bread that said it works well for grilled cheese sandwiches, but I haven't made it yet. I'll see if I can dig up the link.

I was about to say, I'm glad none of my family members are prone to the sort of adventures that would make me worry about them. Then I remembered my niece Vulvatron, recently at a heavy metal concert in Slovenia, travels and drinks all over Europe every year, but at least she's always with good people who will keep her safe. And then I realized, the adventurous family member who hikes and climbs stuff and goes off into the wild is, um, me. hahaha facepalm

When we did grilled cheese, back before the drastic reduction of fat in our diets, it was white bread, buttered on one side with cheese between the buttered sides, in a skillet with more butter, and a weight or the spatula pressing down to flatten the bread even more. Can't take all that grease now, so we do what we call "cheese toasties": multigrain bread, toasted in the toaster, cheese between freshly popped up slices of bread, the sammich flattened by pressing between paper towels, then popped in the microwave for enough seconds to melt the cheese to where it's just starting to ooze out the sides of the bread. Nom.
