I cannot has bread anymore. I have to look into the grilled cheese on some sort of zucchini or figuring out how to make keto bread, which basically looks like it is made of egg whites and protein poweder.

Have you done cloud bread? It's pretty good and easy to make, and is basically just eggs and cream cheese. You couldn't grill a cheese on it, but I have melted cheese on it, and it is tasty.
Ugh, just realized I've worked 15 days straight through without a break on my current project, including a 14-hour day yesterday. I'm definitely getting too old for this kind of pace, not bouncing back from a double shift quickly like I could in my 30s.
My supermarket has an English toasting bread that's not as soft as a typical sandwich loaf, so that might be a good place to start. I'm going to try the French raclette cheese, as well, though it may be a little soft for the job.
I got a quite sharp provolone to put into my chicken Alfredo casserole, and it's terrific. It's too sharp for my taste buds to want to eat it straight, but my casserole was so good I don't want to leave the leftovers alone to have for lunch at work.
I think of grilled cheese and toasted cheese as being two different things, Laura. Toasted cheese (or, as we call it "cheese toasty") is open faced and made in a toaster oven. Grilled cheese is closed faced and made on a griddle or pan on the stove top. With butter, of course.

I used to do this during busy conference seasons and once I got past 14 days, I started going insane.

Same nomenclature as lisah re: grilled vs toasted. I am also partial to a sandwich made with toasted bread and cold cheese although I don't have a name for it (most often made because I generally keep sliced bread in the freezer and toasting it is the quickest way to make it edible but sometimes that particular flavour profile is just What I Want Now.
Can you do rice cakes or corn tortillas or anything vaguely bread-like, Sophia? I'm mostly just curious with a healthy doe of wanting to try to come up with a grilled cheese sandwich facsimile for you, feel free to ignore me.
