Thick white homemade bread makes an excellent grilled cheese sandwich, but I am partial to the super nutty seedy whole grain bread for the flavor factor. Bottom line, I am not pushing away any grilled cheese sandwich, or toasted cheese as my family said in my youth. Tomato soup on the side please.

I like dipping my grilled cheese into salsa. Gives it a nice kick.
I'm going to have to get grilled cheese for lunch after all this.
In practice, I'm pretty sure the best bread for grilled cheese is whatever bread is available. In theory, I could make an argument for all the different styles.
I cannot has bread anymore. I have to look into the grilled cheese on some sort of zucchini or figuring out how to make keto bread, which basically looks like it is made of egg whites and protein poweder.
