I cut out lids for another dozen mason jar lights(target had purple jars!) im gonna need more solar lights...
The ridonkulous thing is I'm giving them away.Most, anyway. I know who likes lights on their decks and porches & who the style fits.
And I tweaked my neck second to last lap of swim. Annoying that it was a cool down lap.

Stacked. I had to fiddle the cooking time from before, which is obvious due to the solid mass in the middle, but oh, so good. Though I forgot the olives. Will fix next time!
Olives?! Oh, I don't do that. But delighted you liked the results of my oh-so-vague guide! Really, the one true enchilada is your favorite one. It's all about what balance of flavors you like and texture in a bite. Clearly, stacked hits it for me. It's the uniformity of the corn tortilla and all the other stuff every bite.
Because I am a lazy cook, when I make red beans & rice, I use a boxed mix from Zatarain's. They have a recipe on the back of the box for a layered enchilada dealie, using the red beans & rice in the layers. (It looks pretty good, actually. I've been meaning to try it.)
The engineering of the stacked enchilada is a lot easier to manage, as well, you don't have to worry about tortillas cracking
I have been accomplishing nothing but TV! Although I did take a quick break to make dinner, which was delicious. Baked maple dijon salmon with wild rice and roasted snap peas + red onions + fingerling potatoes.
I overdid it today, and am already getting sore. I should have stuck to tv.
On plan for today: shower, clean upstairs, laundry, hardware store, swim. After coffee and empanadas.
I'm working on coffee. Then maybe a plan.
I don't know why I think I can eat smoked salmon without getting assaulted by the cats.

Buy more cotton-burr compost/mulch
Buy two more boxwoods
Remove nasty, half-dead spirea
Plant boxwoods
