Cook's Illustrated is the most sciencey, I think. I've got their New Best Recipe book.

CI has a newish cookbook called something like The Science of Cooking that I really really want.

It's my favorite week for lunch in the cafeteria! I missed the Italian sandwich yesterday, but got the Rueben today, and am already looking forward to the Buffalo chicken sandwich on Friday....
