Oh yeah, I used to microwave a scrambled egg, and it was fine, but I bet doing it as a sub for baked is actually good!

I am out of eggs at home. But I do have bacon, obviously.

One of my fave things has been toast with avocado smooshed on it and a shirred egg on top. I never add butter, Burrell, but instead use a a splash of whipped cream which we often have.

Edit: Or, I guess I can just use lime+ mayo, but I love it in one jar. I miss my old grocery store that catered to the many varied immigrants in my old neighborhood.

I don't see why not both, myself. unless the heat will come from the spices? That would work. Chile + lime is the best, however you can achieve it.

I will check my Eggs cookbook for unusual deviled egg suggestions when I get home, I am pretty sure it had some that sounded good.
