It was good! no crispy skin, but it was really tasty. And so freaking easy... made great juices for gravy too.

OOH. YES. I need to go to TJs and get brie and make brie and granny smith turnovers. And also smoked turkey for turkey, brie, and apple sandwiches.
Mmm. I will have to try. Whole chickens are SO much cheaper than parts of a chicken. And I like to make the chicken dance as I rub it it salt and peppers and herbs!
I have some flat Prosecco in the fridge...I don't know if I will use that to make some gravy with, as I slopped a ton of lemon over Mr. Chicken and stuffed slices of butter and garlic up under the skin.
I also want to try to make mashed cauliflower to go with it; I adore roasted cauliflower, and think mashed would be very yummy also.
ETA: Vortex, I love Brie so. damn. much. I can (and have) eaten just a slightly melted wedge with apple slices and a baguette on many an occasion.
Yes. I spent a summer in France and ate brie every day. I was actually was tired of brie for a while. So, I switched to Camembert. Seriously. Love it.
Emmett discovered Brie en Croute this year and went batty for it. We have to limit it around the house to a quarterly event.

We were going to go apple picking this weekend, but I wasn't feeling up to it. Maybe next weekend.
I made a pot pie from scratch (I make a casserole dish-sized one), which is time-consuming to prepare but SO GOOD. Thanks to the wonder of Not Chik'n bouillon cubes (which are both vegan AND gluten-free), it's a pretty damn good pot pie. I just make it all veggie, and then make some chicken breast separately and add it in to my serving on my plate, and it's all good.
