Hey, does anyone have a good lemon based dessert recipe that isn't lemon bars that they want to share? I feel like baking this weekend, and I need to use up some lemons.

I've got a lemon cupcake recipe around here somewhere.

Lemon Cupcakes:
1 1/3 cup all-purpose flour
1/2 teaspoon baking powder
3/4 teaspoon baking soda
1/4 teaspoon salt
1/4 cup canola oil
2/3 cup plus 2 tablespoon sugar
1 cup rice milk
1 teaspoon vanilla extract
1/4 cup lemon juice
1 tablespoon lemon zest

Preheat oven to 350. Line 12-muffin tin.

Sift together flour, baking powder, baking soda, and salt. In separate bowl, combine other ingredients. Pour dry into wet and mix until smooth. Fill each muffin cup about 2/3 full, bake for 17-20 minutes.

Lemon Frosting 1/4 cup nonhydrogenated soy margarine, softened 1/4 cup soy milk 2 tablespoons lemon juice 2 cups confectioners sugar, sifted

Whisk the margarine with a fork or electric mixer until fluffy. Stir in the soy milk and lemon juice; add the confectioners sugar and mix until smooth. Refrigerate until ready to use.
