Woo hoo! My peanut sauce turned out gooooood.

Both the tofu and noodles had gone bad so I knew I needed to up the protein in this stir fry. Cooked some ramen noodles to add, did them with garlic, mushrooms and tossed in an egg.

Set that aside and cooked up asparagus, red bell pepper and onions. Put in half the peanut sauce. Integrated. Added noodles & mushrooms. Added more sauce. Threw in baby spinach leaves and stirred through.

Oh yeah, there were almond slivers in there too.

Anyway, like fancy homemade Pad Thai. Spicy enough to make my nose run.
