Woo hoo! My peanut sauce turned out gooooood.

Both the tofu and noodles had gone bad so I knew I needed to up the protein in this stir fry. Cooked some ramen noodles to add, did them with garlic, mushrooms and tossed in an egg.

Set that aside and cooked up asparagus, red bell pepper and onions. Put in half the peanut sauce. Integrated. Added noodles & mushrooms. Added more sauce. Threw in baby spinach leaves and stirred through.

Oh yeah, there were almond slivers in there too.

Anyway, like fancy homemade Pad Thai. Spicy enough to make my nose run.

Unusually and exceedingly peculiar and altogether quite impossible to describe

My latest food obsession is quinoa salads, esp this one with quinoa, black lentils, arugula, mint, and feta cheese. Mmm.

I made a quinoa salad for Mother's Day -- quinoa, corn, black beans, tomatoes, olive oil, balsamic vinegar. You can also use bulgur or couscous instead of quinoa.

In another few weeks, it will be hot enough that I'll want to cut my hair, cuing the annual poutfest from Hubby, who thinks all women should have long hair. Fortunately he's learned to pout semi-quietly, because come June, this mass of hair is coming off the back of my neck.

My hair hasn't been this long in years. (It's wet in that picture, so when it dries it's not quite that long, but you get the idea.) I'm getting it cut at 12:30 tomorrow. Chin-length, probably. DEFINITELY above my shoulders. I've hit the point where I can't stand the feel of it on my shoulders and back.

The Boy is...accepting. That's the best I can say. I don't get men and their thing with women's hair. I really don't.
