Question for buffista cooks: I bought a 1/3 lb. mahi mahi filet tonight, and want to do something a bit creative with it for dinner tomorrow night, but have no experience cooking this fish. Does this plan sound like it could turn out all right?
Sautee one side over medium heat for 5 minutes in pan coated with olive oil and a bit of salt. Drizzle the top with Grand Marnier, cover with thin banana slices and sprinkle lightly with cinnamon and brown sugar. Flip and sautee another 6 minutes.
Any suggestions or warnings?
I'd be afraid of the bananas falling off when you flipped it over, but I am really bad at flipping. I probably don't have the right spatulas.

Growing up in So. Florida mahi was considered one of the most flavorful and delicate of the ocean fishes so I'd be careful about overdoing it. By which I mean, don't overcook and also don't overwhelm. It's very tasty as is, so I'd consider taking one of those strong flavors out.
Maybe drop the cinnamon and sugar and just let the sweetness from the liquor stand? (The bananas are green, so they'll be more tart than sweet.)
