My farmer's market does not yet have too many good spring veggies. The goat cheese people were there, however, so I have a couple of varieties to nom over the next week.

By 9:30, the empanada lady is sold out of her best empanada- the spinach one. And she's been making more every week, and every week, they're gone. Our market runs 7-12, and stuff moves. The crazy asparagus guy was already getting thin at that time too, and he started with basically a pickup truck bed full. Did I mention he's a hoot? A viking-hippy cross, mountain of a man with long blond hair, usually dressed in full camo hunting gear. Organic farmer, and quite the talker. He was teasing a kid insisting she preferred water to lemonade with "You know what fish do in water, right?) Booming voice, local B'more accent. And his asparagus is awesome. And he sells praying mantis nests. For real.

I can't believe my CSA doesn't start until the end of June. I want it now! Stupid northern growing season.
I have always loved veggies, even as a kid. I tend to assume people who don't like vegetables dislike bitter flavors and sometimes wonder if perhaps "bitter" tastes different to different people.
I'm trying to think of veggie solutions. The problem is I'd have to know your taste and what you are trying to avoid. Are you trying to completely eliminate meat and cheese? If not, there are many delicious ways to combine veggies with meat and cheese in a single dish. Do you react to veggies the way ita does? Cause in a case that extreme, no recommendations. An example that many would like - Quesadillas: tortilla (corn or wheat as you prefer) whole or cut into strips with olive oil, spinach, garlic, salt, black pepper, and a little melted cheese. Alternatively cabbage or the green of your choice. Or Nopales (prickly pea fruit. tomatos can be include. Salsa or sliced chiles if you want some heat. Soy cheese if you are avoiding dairy. In general improvise to taste - lime juice, wine, garlic, onion. Or you can make mushroom quesadilla. Or mushroom quesadillas with pizza sauce or picante sauce, onions+ sweet peppers if you like, and you have Mexican pizza.
Thank goodness for y'all or I could've missed that my local market starts up next Sunday. Woo hoo! Hours are changed this year to 10am - 2pm, which means I won't have to get up early. Nice.
