Anybody know how long matzo meal keeps? I want to make matzo balls, and I couldn't find matzo meal at any of the local stores, and I don't want to make a special trip out to Safeway just for one thing. I have a package that I bought last Passover, or maybe two years ago. I used some of it and then put it in a ziplok bag. It still looks OK, but is it still OK to use? I can't really think of any way that it could go bad, except getting stale, and it seems like that would be negated by all the liquid in the matzo balls.

So today is the second time this season I've left my windows open during the day. Looks like I'm going to leave them open tonight too, as it's 75 degrees in my apartment, with a low tonight of 60.

Hil, do you have any matzoh you could pulverize in the food processor? (I'm not sure matzoh meal can go stale, but I'd be concerned about critters in any grain that old unless it's been stored in the freezer.)

Thanks to whoever suggested roasting all those beets. I did that, and then tossed them with some sauteed cauliflower and collards and then threw in some basalmic and a handful of feta. Awesome.

I can state with amazed pleasure that year-old matzo that hasn't been opened is still tasty. (I didn't finish the case of Yehuda from last year, but was craving it today.) So the meal might still be fine.
