My key lime pie is a key LAME pie. The whipped cream is lame, the custard is lame (and I'm pretty sure the zest should be adding texture) and the crust is tasty, but lame. I'll chalk it up to a learning experience.

ETA: I was following the America's Test Kitchen Recipe, but even my Pie and Pastry Bible recipe has 1.5 teaspoons of zest. next time, however, I am going way easy on the zest.
I've never seen a recipe calling for zest. But then again, I found my One True Recipe years ago and any deviations I make are of my own creation.
This was my first. I've never even eaten it before. But it's surprising how many of my friends have told me it's one of their most favourite pies.
It's a fabulous pie, just the perfect combination of tart and sweet and so easy to make, but like I said, it's odd to see a recipe calling for zest-- not that it's necessarily bad, just different.
FWIW, the recipe I use is Nellie & Joe's. Easy and super fool-proof.
