This is what everyone tells me. I still have an irrational fear of screwing it up. I may try it next week, after my contract finishes.
I've never done a roux that wasn't just for thickening gravy (blonde) but Alton Brown suggests cooking the roux in the oven, I guess to avoid the concentration of heat in one direction. I dunno.
