I've never tried Jiffy - it has lard in it.

I just ordered this for the kids. I can't wait to try it out.
That looks cool, Cash. Although a sidecar might be even cooler ...
Jiffy is too sweet for me. I was raised on Southern cornbread.
For no good reason, I assumed that would be sweeter!
Amy we have a side car and it's not as great as you'd think. It makes turning sort of tricky, you've got odd considerations to make and it pulls on the frame in a strange way. ALSO, the way the hitch is, it doesn't fit on many bikes we have. At least not my hybrid bike. Maybe we need to get used to it still?
I kind of want one of the perch seats but everyone points out that they are MORE dangerous than either a trailer or a side car. I just feel like the kid would be less exposed that way.

Oh god, I was just kidding! Like, making it up! I didn't they actually existed! Hee.
Of course, now that link to it, I know I've seen those pictures before.
I blame the Sudafed.

I ignorantly failed to notice this until just a week or so ago, and now our many boxes of Jiffy are languishing, scorned, on a kitchen cupboard. Have you found a lard-free cornbread mix you'd recommend?
We have a trailer, but the kids are pushing maximum weight limit and it's a bitch to pull them. They're both getting used to their bikes with training wheels but we really want to get them on the road with us and this way is safer than their own bikes. Besides, this way they can HELP pull their own weight!
I side with Ginger, corn bread should not be sweet.
(Until you put honey and butter on it, for dessert.)
JZ, corn bread from scratch is so simple, I don't think the mixes really save any time.
I've never really used the mixes. I vaguely recall getting one at Whole Foods a little while ago that was pretty good, but I can't remember which one it was. At my local supermarket (which is a really crappy tiny supermarket -- the Watergate Safeway), there's some other brand that's always next to the Jiffy that doesn't have lard. I can't remember what brand that one is, but it's some common brand, like Betty Crocker or something.
I've always just made cornbread from scratch. Although I now feel that I have been foolish in forgetting the pancetta and rosemary. That sounds good.
My DH is working late and the kids drove me INSANE tonight. I scolded them over no worse than their usual impish behavior. I feel like a failure. Sigh. At least there's wine.
Speaking of whines, my students are driving me a bit batty tonight too. Two students turned in their last papers 2 weeks late--ie, when the final were due--are now emailing me to ask when I'm going to get comments back to them so they can use them for their now-late final portfolios. grrr. Told both, sorry, no comments for you! Turn in whatever you want for the final. Just turn it in.
