I've never really used the mixes. I vaguely recall getting one at Whole Foods a little while ago that was pretty good, but I can't remember which one it was. At my local supermarket (which is a really crappy tiny supermarket -- the Watergate Safeway), there's some other brand that's always next to the Jiffy that doesn't have lard. I can't remember what brand that one is, but it's some common brand, like Betty Crocker or something.
I've always just made cornbread from scratch. Although I now feel that I have been foolish in forgetting the pancetta and rosemary. That sounds good.
My DH is working late and the kids drove me INSANE tonight. I scolded them over no worse than their usual impish behavior. I feel like a failure. Sigh. At least there's wine.
Speaking of whines, my students are driving me a bit batty tonight too. Two students turned in their last papers 2 weeks late--ie, when the final were due--are now emailing me to ask when I'm going to get comments back to them so they can use them for their now-late final portfolios. grrr. Told both, sorry, no comments for you! Turn in whatever you want for the final. Just turn it in.
Jiffy also uses more white flour than cornmeal, as opposed to my grandmother's recipe that uses a tablespoon of flour to a cup of cornmeal. She used a teaspoon of sugar, but a lot of people don't use any.
Martha White's mixes use vegetable shortening. Glory Food's mix is good and appears to also use vegetable shortening. Cornbread is so easy that I usually only use mixes if I'm making one of the doctored cornbreads with added stuff like corn and cheese.

I use 1 1/4 C of cornmeal, 3/4 C of flour, no sugar, 2 t baking powder, 1 C milk, 1/4 C veg oil, 1 egg. I occassionally like to add corn (esp. the canned mexicorn mix).
Jiffy mix is corn muffins to me which is an altogether different critter from cornbread.
