It seems though that the guitar player of Roxy Music is Phil Manzanera, and I see no record of him playing with Henley or Hornsby
Manzanera was playing with Roxy Music from as early as 1971. He's a really well known guitarist and probably influenced some of the musicians you note. Also, he has a very particular style, clean with a lot of reverb (almost surf guitar) that might've been emulated.

tommy, I haven't heard Regina Spektor's new album, so I don't know which of her previous albums it most closely resembles, but my favorite of hers is Begin to Hope.

I was listening to Aretha Franklin's "Ain't No Way" this morning and what strikes me about that track is as excellent as Aretha's vocals are, the cherry on the sundae is the background vocals. Those background singers are doing exceptional work there - unless that's all producer stylings.
Any other songs you can think of where the background singers really make a song GREAT?
