I haven't read much and I too have been disappointed in what I've read. I think that the apocalypse fic was riddled with holes. Satellite phones working - WTF? Who's keeping them running? But hey post-apocalyptic dystopian world - yay!

That's like the apocalypse fic where the impala appparently ran with no gas.

There are two apocalypse fics that sort of trump all other apocalypse fics for me, both of which are Wincesty, though. But the one is so well-researched and realistic about how systems would break down, what would go bad first, how Dean and Sam survive as the last two people on earth, is just fascinating to me.

I have a great love of well-done apocalypse fics, but a lot of them don't meet my criteria.

I know the one you mean Amy. It's amazing. Well written fic always trumps my wincest squick.
