Holy smokes. How many teachers does your school have? We lost 2 at the end of last year. We have 44 teachers on staff.

I'm still at school. I'm done with work, but it's raining like Gustav made his way up here and I'm trying to wait it out till I run out to my car.

Compassionately intolerant

Calli, here you go:
1 1/2 cup walnuts, finely ground(I use raw cashew bits instead and I like them much better)
10 pitted dates
1/3 cup unsweetened cocoa powder
1/2 vanilla (I use a splash more) 2 tsp water

Mix ingredients in a food processor, adding the liquid last. Mold and chill.

I add a half handful of crystallized ginger, which makes me very happy.

There are SO many variations possible. I did one with almonds that tasted good but was a bit too gritty.

It IS a healthy recipe and a diabetic friend, who really enjoyed the treat, pointed out that the ingredients are very similar to a Lara bar.

I find having just a wee sliver really, really satisfying. Plus, including the time it takes to get stuff out of the cupboard, prep time is roughly 3 minutes! A great recipe to have in the event of unexpected guests. And, you can make interesting shapes with it...your very own tasty, healthy cakewreck.

I generally make a half recipe
