ita, if you can tolerate spelt, I have had pretty good success in cookies and waffles with a 1-to-1 substitution of spelt flour for wheat. It is fluffier than wheat, so the texture is a little off, but not bad. It doesn't have much gluten, so bread and stuff would be more affected.

If by weirdly grainy you mean texture sort of sandy, then that's probably the rice flour.

I made Trader Joe's gluten-free brownies the other day (my celiac diseased sister & nephew were visiting) and they were quite tasty.

Tangentially, can you label yourself allergen-free? Wouldn't one just mean "so far"?

My standard response to "Do you have any allergies?" is "Not that I'm aware of."

Ha! Went to buy coffee beans, and the guy at the register made a Rainman joke after I made a "clearly I need this coffee because counting seems to be beyond me" joke. Then he mentioned that I probably didn't know the movie because I was two when it came out.

I'm not sure why I'm convinced pancake mix in cookies is wrong, but I'm having a hard time shaking it. Still, it's an easy enough recipe that I just might try.

At home so far I have brown and white rice flours and corn flour.

Man, I'm indoctrinated by wheat. All these things to try and add back up to it. I think I've tried spelt, but I just can't remember in what, or how it turned out.
